Battered Banana Blossom (and chips obviously!)

This high calorie gut buster is delicious, and you can rest safe in the knowledge that banana blossom has almost zero calories in it so deep fry to your hearts content!





Ingredients


1 can of banana blossoms (or double everything, why not?)

Vegetable oil


Pre-battering mix


120g all-purpose flour

1 full square of nori seaweed

3 tsp dill

1 tsp (smoked) salt


Batter Mix


120g all-purpose flour

1 tsp turmeric

1 tsp salt

3tbsp nutritional yeast

3 tbsp pickle juice (from a jar of gherkins)

2 tbsp lemon juice

Beer or water


Pre-battering mix


1) Cut the nori sheet into small pieces and blend it in a food processor until it is almost a power.

2) Add the other ingredients and dry mix it all well and set aside in a bowl.


Batter mix


3) Sieve the flour into a bowl and add all the other ingredients. Add beer or water slowly and carefully until a thick batter mixture is achieved.

4) Heat a pan with a sufficient amount of vegetable oil for frying.

5) Open the banana blossoms and first roll them well in the dry pre-batter mix before covering them in the batter mix.

6) Fry the pieces for around 3 minutes a side or until golden brown.


I’ve had it with crushed and roasted potatoes, potato wedges and mushy peas. Make sure to serve with fresh lemon and dill sprinkled over the top.
